Sambal Brinjal

Ingredients
Brinjal (Eggplant)
Cooking oil - 2 tablespoon
TauCheo (preserved Soy bean) - 1 tablespoon
West Coast Sambal Chilli - 3 tablespoon
Sugar - 1 tablespoon
Water - 1 cup
Cornstarch Thickening (Add 2 tablespoon of cornstarch to 1/2cup water and stir well)
Cooking Method
Heat cooking oil (medium heat)
Add TauCheo
Add West Coast Chilli
Stir fry slightly
Add the Brinjal (Eggplant)
Stir fry over medium heat
Add water
Add sugar
Stir well and cover the cooking pan
Simmer for 5 to 8 minutes (stir occassionally)
Uncover the lid and stir,make sure Brinjal is well covered with sauce
Add cornstarch thickening
Mix well and reduce the sauce
Serve hot
This dish can be found at most cooked food store in the hawker centre and coffee shop. It goes well with plain white rice.
