Sambal Brinjal

Ingredients

Brinjal (Eggplant)

Cooking oil - 2 tablespoon

TauCheo (preserved Soy bean) - 1 tablespoon

West Coast Sambal Chilli - 3 tablespoon

Sugar - 1 tablespoon

Water - 1 cup

Cornstarch Thickening (Add 2 tablespoon of cornstarch to 1/2cup water and stir well)


Cooking Method

  • Heat cooking oil (medium heat)

  • Add TauCheo

  • Add West Coast Chilli

  • Stir fry slightly

  • Add the Brinjal (Eggplant)

  • Stir fry over medium heat

  • Add water

  • Add sugar

  • Stir well and cover the cooking pan

  • Simmer for 5 to 8 minutes (stir occassionally)

  • Uncover the lid and stir,make sure Brinjal is well covered with sauce

  • Add cornstarch thickening

  • Mix well and reduce the sauce

  • Serve hot

This dish can be found at most cooked food store in the hawker centre and coffee shop. It goes well with plain white rice.
