Sambal Cucumber Salad

Ingredients

1 large cucumber

Pineapple chunks (For convenience I used canned pineapple. You can use fresh pineapple)

1 tomato - cut into wedges

1 fish cake - cut into cubes

Dressings

Sambal dressing - 4 spoon of West Coast Sambal Chilli mixed with 2 spoon of chinese rice vinegar.

1 spoon of Grounded dried shrimp - dried shrimps, washed and drained (do not soak in water) grind it using a blender and toasted lightly in an un oiled pan. (You can make this in advance and store in the fridge)

4 spoon of grounded peanut

1 spoon of toasted Sesame seed


Method.

Basically, just toss everything together like rojak.
